I am stuffing my whole chicken with a stuffing made out of rice, mushrooms, onions, green peppers and seasoned with soy sauce and ginger.
What type of spice rub can I put on top of the chicken that would be compatible flavor wise with the seasonings in the stuffing?

I'd add a little bit of garlic to some ginger and the soy and rub that on top. Maybe a bit of rosemary as well.

When making a stuffing, you really need to be careful with your cooking because you run the risk of either undercooking the stuffing and middle of the bird or overcooking the bird to make sure the middle and stuffing is cooked through. You might want to consider simply cooking the bird on top of the rice/veggie mixture. This way the rice gets flavored by the chicken, but the cavity is open and proper cooking can take place.
