What can I do with Ground Chicken??

I have a really easy and delicious recipe for turkey meatloaf that can be made with ground chicken as well:
1 lb ground white meat turkey (or chicken)
1 14 oz can of jellied cranberry sauce
1 3/4 cups of bottled salsa (I use mild)
3 tbsp brown (or white) sugar
1/3 cup of oats
dash of salt and pepper

Preheat oven to 400 degrees. Melt cranbery sauce in saucepan on medium heat (or in microwave on high for 3 minutes, until melted.) Stir well. Mix in salsa and brown sugar. Half of this sauce will be used for the recipe.
In a separate bowl, combine ground meat with 1/2 cup of the sauce, oats, and salt and pepper. Mix lightly.
Shape into a loaf and place into a sprayed loaf pan or oblong casserole dish. Pour one cup of the sauce over the top of the loaf. Bake uncovered at 400 for 45 minutes. Serve with rice or potatoes and steamed broccoli.

PS You can also make the turkey mixture into patties and bake at 400 for about 25 minutes
The sauce is also good with chicken, fish, burgers, meatballs, or can be served over rice.

I make chicken meatballs which are delish esp with chicken soup.
For 1lb package, add 1 egg, 1-2tbsp matzah meal, a bit of nutmeg or paprika (optional). Knead for about 5min. (I don't add salt as my meat comes a bit salty). Form into walnut-sized balls and boil for 10min or so either in chicken soup or slightly salted water.

They can be also cooked like regular meatballs with tomato sauce.
Or I like adding chopped water chestnut from the can, season with grated ginger and chopped scallion for more oriental flavoured dish.


Alternatively, you can make chicken kebabs if you have seasonings. Form into long-ish tube and broil.

for shabbos you can make stuffed vegetables, ex zucchini or peppers or mushrooms

for during the week, I make s+s chicken balls or stir fry veg and add mince - chicken bolognaise - which I serve with spaghetti.
