some sort of salads- I need help. Something brand new and something good!!! I am totally uninspired.

(my food processor broke and now I can't make potato kugel... Crying )

Please share your recipes for the oriental cole slaw, carrot salad, spinach kugel and lemon/wine sauce chicken cutlets. But only if they're easy and use basic ingredients. Otherwise my search will go on...

Oldyoung, maybe I can pay you back...

TROPICAL SALAD (Tastebuds restaurant)

Ingredients

FOR THE SALAD:
1 head Romaine lettuce
2 ripe mangos, cubed
1 cup sliced almonds, lightly toasted
1 cup craisins
1 cup ground hazelnuts
4 red apples, sliced into thin wedges
3 cups fresh strawberries, sliced

FOR THE DRESSING:
1 cup mayonnaise
1/2 cup your favorite apricot preserves
1 tsp. garlic powder
1 tsp. white vinegar

Directions
In a small mixing bowl, combine the mayonnaise, apricot preserves, garlic powder and white vinegar. Using a hand blender, blend your mayonnaise mixture until it becomes creamy smooth. Set aside.
In a large salad bowl, toss together the lettuce, mango cubes, sliced almonds and craisins. Then place the lettuce mixture on a platter or on individual salad plates. Take apple wedges and surround the platter with the apple slices, creating a sun effect. Top lettuce mixture with the strawberries and sprinkle the ground hazelnuts generously over salad.
Serve with the apricot dressing.
MAKES 4 SERVINGS

I made this last Shabbos, and it is very good!

I have no idea. I have salmon in the fridge but I don't know what do with it.
I have a package of chicken but need some ideas.

I'll prob make sushi.

the cod was on sale only 5 dollars a pound so it was actually cheaper than my regular salmon and so far ur recipe's have not disappointed.

Great price. Okay, here's the recipe for tonight:

OVEN-ROASTED HALIBUT (I'm using cod) WITH HERB CITRUS VINAIGRETTE
from Fresh and Fast, by Marie Simmons

4 pieces halibut steak or thick portion of fillet, 3/4 inch thick (about 6 ounces each)
Salt and freshly ground pepper, to taste

Herb Citrus Vinaigrette:
3/4 Cup extra-virgin olive oil
3 Tablespoons fresh lemon juice
2 Tablespoons ice water
1/2 teaspoon grated lemon zest
1/2 teaspoon grated orange zest
1 small garlic clove, crushed through a press
1 Tablespoon minced sun-dried tomato (packed in oil or dry and reconstituted in boiling water for 5 minutes)
1 Tablespoon chopped fresh basil
1 Tablespoon chopped fresh Italian (flat-leaf) parsley
1 Tablespoon chopped fresh dill
1 teaspoon fresh thyme leaves, stripped from the stems
salt and freshly ground pepper, to taste

4 very thin slices of lemon, for garnish (optional)
Herb sprigs, for garnish (optional)

1. Preheat oven to 450 degrees F. Arrange the fish in a large baking pan. Sprinkle with salt and pepper. Bake just until the center turns from translucent to opaque, 10 to 12 minutes.

2. Meanwhile, make the Herb Citrus Vinaigrette: Whisk together the oil, lemon juice, water, lemon and orange zests and garlic. Stir in the sun-dried tomato, basil, parsley, dill and thyme. Add salt and pepper.

3. Transfer the fish to a platter or individual serving plates and spoon the vinaigrette on top. Serve hot, warm or at room temperature, garnished with lemon slices and herb sprigs, if using.

Serves 4

(Personal note -- I love citrus juices and will probably use more. Husband loves sun-dried tomato, so I'll probably use more of that, as well)

Once again thank you for taking the time to type up these recipes. And Even better I have all the ingredients in my house. I also love citrus but will stick with recipe for now and then next time play around. with it.

You're quite welcome. If you have everything, then you're obviously like me -- you like to have lots of stuff on hand, which is good. We did have to buy some fresh herbs (and a few other things) but I decided to use dried thyme and basil, because basil is still really expensive and I like to use very little thyme, usually. I can't wait until basil prices come down this summer. Even with a couple of dried herbs subbed in, I think it'll be tasty -- I love fresh dill, so that'll be the star. My dream would be to grow fresh herbs in my apartment, to save $.

I think I made something like this ion pesach and they were a huge hit!

Well I was actually at bed bath and beyond awhile ago and they had one of those Herb gardens on clearance for like 50 dollars and then with the 20 % coupon it was like 40 dollars and it came with pods to grow basil thyme dill and 3 others cant remember it is so cool its great for someone in a small space or someone like me who kills any plants she touches.

I've seen that! They have a bigger version around here, for $150, and it's quite big. This seems much more reasonably priced and more manageable. I'm going to look into it. My husband will say NO, because we have no space and I'm a plant-killer. But I'm very tempted.
