I don't have a mixed veggie kugel recipel, but if you're interested in a broccoli kugel that uses a bag of frozen broccoli, let me know.

This is delicious.

Broccoli Kugel
• 1 (2 lb.) bag broccoli cuts, thawed and drained
• 1 cup light mayonnaise
• 4 eggs
• 1-½ tsp Kosher salt
• ¼ tsp coarse black pepper

Combine all ingredients and mix well.
Pour into well greased 9" round pan.
Bake at 375 for 1 hour and 15 minutes or until set and edges are golden brown.

Thanks for the recipe. It looks very simple. Fewer steps and ingredients than most others.

Do you cook or blanche the brocolli at all? Or do you just let it thaw before using? I've seen both suggestions for various kugel recipes. Just wondering what works best.

I just made frozen veggie kugel.
took california frozen mix, microwaved a lil, mixed in 2 eggs, some mayo, spices, matza meal, and took hand blender to make it little bit smoother...spooned them into cupcake tins, and baked till browned around edges...

I love the Suzie Fishbein recipe from her quick and easy cookbook.

1 bag of california frozen veggies (cauliflower, carrots, broccoli)
Pour over 1 can of sweet creamed corn
Top with French's fried onions.

Bake covered at 350 for 30 minutes, then uncovered for add'l 15 mins.

It's delicious and so easy.

I had a different recipe and I just substituted the frozen veggies. ill c if its any good. I did the mayo soy milk thing like the one above. it reminded me! thank u!

Oops, sorry I left out a step. You defrost and drain the broccoli before using.
No need to blanch. This is one of the most simple recipes I have.

Has anyone made this recipe before? I know ra_mom tends to have good recipes, so I'm thinking about using it even if nobody gives a second opinion on it. But this recipe seems so "strange" because the broccoli isn't processed at all.

So has anyone tried it? What did you think?

I made it - and made it again and again many times. We like it and it's quick and easy. I have also made it with cauliflower or brocc/cauli/carrot mix. It looks especially nice if you use a nice baking dish or large quiche pan.
