Healthy soup for lunch

I’m trying to watch what I eat, but I’m struggling with healthy lunch ideas. I really like soup and thought maybe I can put up a big pot and keep that around for lunch.

Does anyone have ideas of easy, healthy, yummy soups I can make for myself for lunch? Preferably pareve or milchig. TIA!

Obviously a vegetable soup is healthy, add mushroom soup mix for a delicious taste and other spices. Split pea soup is also very healthy, add chopped onion and carrots, split peas, salt and pepper, and you can add meat in either soup for protein and a filling meal. Chicken soup is another option with lots of chicken for the protein.

I really like this one! Very easy and cooks fast. I usually use soup powder/water instead of broth.

I actually already make and love the cauliflower & zucchini soup from that thread. Looking to branch out to other similar ideas.

Roast vegetables and blend. Lentil soup pretty easy also

I posted this before, but this is my soup hack for making 8 pots of soup at one time.

2 lb onion

1 lb carrots

6 stalks celery or small celery root

8 cloves garlic

1 large parsnip

1 medium turnip

1 zuchinni

1 bell pepper

Process onions (S blade) and saute for 5-10 minutes.
While onions are sauteing, peel and process the rest of the vegetables.
Add to onions.

Saute for 30 minutes, stirring to make sure bottom doesn't burn.

When cool divide into 8 baggies and freeze. This takes up much less room then 8 quarts of soup!

To make soup:

If you just want a rich veggie broth, add 3-4 cups water and cook 30 minutes.

If you want to add more vegetables, add 5 cups water. Add (one or more): Cook 45 minutes

Broccoli

Cauliflower

Mushrooms,

Potatoes

Frozen mixed vegetables

Butternut squash

zuchinni


You can eat the vegetable soup chunky, or blend with immersion blender.
