This one's for shanie5...
3/4 c. flour
3/4 c. dark brown sugar
1/2 c. old fashioned oats
6 tablespoons unsalted butter or margarine (I use oil)
3 medium red apples, such as macintosh or cortland
3 medium green apples, such as granny smith (I use 6 cortland apples instead, since I find those to work best)
1 cup apple juice
1/2 cup honey
2 teaspoons cinnamon
Preheat oven to 425 degrees. Prepare the streusel filling: In a medium bowl, combine flour, brown sugar, oats, an melted butter. Pinch to form coarse crumbs. Set aside.
Wash the apples and, with a melon baller, carefully scoop out the core, creating a "bowl" about 2 inches in diameter. Be careful not to go all the way to the bottom or to break the sides.
Fill each apple with the streusel filling, stuffing them to their tops.
Arrange the apples in a shallow 9- by 9-inch baking dish.
In a small bowl, stir the apple juice, honey, and cinnamon. Pour into the baking pan.
Bake, uncovered, for 25-30 minutes or until apples are tender. If the streusel starts to burn, loosely cover with a piece of foil. (I bake a bit longer until the peels start to split & the apples are really soft)
To serve, drizzle the apples with the pan juices and serve warm with a scoop of your favorite ice cream or whipped cream. (These apples are really yummy even without the ice cream or whipped cream, and can be served cold, at room temp, or warm.)

by the way, I'm likely to use only granny smiths cuz that is our favorite apple.

I know this thread is old, but I have a question on it: can you reheat this recipe and how would you do it on Yom Tov? I want to make this for Sukkos.

How would you reheat it? could I just stick it on the blech? DH doesn't beleive that baked apple can taste good cold - his mother never served it cold

We love these apples warm, at room temperature, or cold. You can warm them up in the oven, just make sure they don't stay in there too long. I've never tried warming them up on a blech, but I'm sure you could do that too.

Amelia-- I make this a lot, and I also freeze a lot. I am not sure that this would freeze so well, as the apples might get pretty water logged.
One thing you can do is make the streusel ahead of time, and freeze it. When you are ready to bake, just take the streusel out of the freezer and core the apples. Oh, and when I make it, I never use apple juice-- I never have it on hand

I'm also going to try to freeze. Hopefully it will still be good.
I have way too much that will have to be done on Sunday.
