Which one from spice and spirit, the one with cranberry sauce and ketchup? I love that one.

2 lbs chopped meat or dark meat turley chopped meat
handful (maybe 1/2 cup) of breadcrumbs, matzo meal or oatmeal (not instant)
some onion powder
tablespoon ketchup or ketchup water (water down what's left when finished with ketchup)
combine and make balls, broil for about 20 minutes, turning over once
for sauce:
large spanish onion
can jellied cranberry sauce
small can tomato paste
brown sugar to taste
small box raisins (optional)
sautee onion until soft, add cranberry sauce, tomato paste, one tomato paste can of water, cook on medium flame until everything combines well, add brown sugar to your paste, one tablespoon at a time. add meatballs and simmer on low for 40 minutes. re-tatse to see if need more sugar.

yes, this one. it was way too tart and tangy. maybe I'd be better off omitting the lemon juice and playing with the sugar?

It also depends on the brand of cranberry sauce you use - I bought shoprite brand (the last time I made this recipe), and the sauce came out VERY sweet - I like it more sour.

I lOVE this recipe, and it's simple and always a big hit....
2 lbs chopped meat
1 cup bread cumbs
1/2 pkg dry onion soup mix
3 eggs
1/2 cup water
Combine all ingredients and form into little balls, lining them up in a 9x13 tin pan.
Sauce:
1 12 oz bottle Heinz chili sauce
1 can jellied cranberry sauce
1 cup light brown sugar
1 1/2 cups water
Combine all sauce ingredeints, pour over meatballs, cover and bake fro 2 hours at 325 F

Made these for 150 ppl (part of buffet) and had to hand out the recipe at the event!
For every 2 lbs chopped meat, you need:
2 eggs
1/4 c. matzo meal
pepper and garlic to taste
1 1/4 c. brown sugar
1/2 c. ketchup
16 oz can tomato sauce
1 can jellied cranberry sauce
In a pot, over low flame, combine sugar, ketchup, tom sauce and cranberry sauce. Allow to simmer. In a separate bowl, mix meat, eggs, matzo meal and spices. Form small balls and drop into sauce. Cover, leaving only a small opening and cook on low flame for 1 1/2-2 hrs. Stir gently so you don't burn it!

Sautee an onion
For each lb. of ground beef:
add one can cranberry sauce and one can tomato sauce and boil...mix well so no clumps
Form beef into balls and boil for an hour.
Sauce is very thick so I sometimes add a bit of water.
It also splashes everywhere if you don't use a huge pot. But it's simple and fast

I dont have a specific recipe, but I have experimented when I couldnt find cranberry sauce (some places in Israel, I cant find).
I put in tomato sauce with either some duck sauce, plum sauce, different marinades for chicken. Played around with the sauces and spices-it usually came out ok.

This is a recipe from my grandma (our family recipe)
1 lb ground meat
1/2 (dry) cup rice, cooked
1 egg
1 tablespoon vegetable oil + enough for frying
1 onion, finely chopped (for meat mixture)
1 onion, chopped (for sauce)
flour
ketchup
water
1 teaspoon sugar
1 bay leaf
Meatballs
Cook rice until almost done.
Mix ground meat, salt, pepper, egg, about 1 tablespoon veg. oil, cooked rice and onion (chopped very finely)
Form the meatballs, dip them lightly in flour, saute (until almost done)
Sauce:
In a pot sautee onion with 1 tsp flour. Add ketchup mixed with water and 1 teaspoon sugar and bay leaf.
Add the meatballs to the pot (there should be enough sauce in it to come level with the meatballs; if there isn't enough initually, add more water mixed with ketchup and add enough flour to the sauce for it to thicken to the desired consistency; you can add more sugar to taste), and simmer covered 10-15 min.
What I do, I don't sautee the meatballs, I bake them on a cookie sheet until they form a crust on the outside, so that they won't fall apart when I drop them into the sauce.

Hey can I bake this at 350 and still have it come out nice?

I usually use apricot jam with tomato sauce (plus some other things like chopped sauteed onion and red wine). As strange as this may sound, cherry jam also comes out very nice. This doesn't come out too tangy or too sweet. Just about right.
