Beets with ginger dressing

Beets with ginger dressing

2 lbs beets, fresh
olive oil
vinegar
ginger
salt and pepper
pistachios

You bake or boil the beets. When cool, hack off the top and bottoms and peel.

Slice into wedges and top with 2 T oil, 1 T vinegar, 1 T ginger (use your vegetable peeler), salt and pepper to taste, and half a cup of already toasted and chopped pistachios.

Mix and serve cold.

I just made this. It is delicious.

I roasted the cubed beets with sea salt and herbs for 30 minutes. I stressed thyme.

I added a capful of lime juice, raspberry vinegar, orange peel and orange juice along with the oil and pepper and chopped pistachio nuts.

Can I make it with canned beets?

do canned beets have a diff flavor and or texture than roasted or boiled beets?

canned beets are fully cooked so you don't need to roast them. I'm sure they'd be fine.
