I haven't tried freezing them.

I believe OOTBubby makes a similar recipe with the batter flattened out in a pan, egged and baked, and she said that it freezes very well.

That's correct. It's called doughless potato knish and the recipe is here some place. If you want it and can't find it, let me know and I'll post it.

10 minutes before soup is done, add noodles.

Potato Puffs

Sauce an onion until soft in 4 Tbsp oil.
Cook up potatoes, drain, and then mash with sauteed onion/oil. Add eggs, flour, salt and pepper; mix well.
Spray cookie sheet very well with cooking spray. Scoop out potato mixture to form little puffs on onto cookie sheet.
Smear top of puffs with egg; sprinkle with sesame seeds
Bake at 400 for about 1 hour.

Preheat oven at 450 degrees.
Cut the potatoes into wedges (each potato, in 4, lengthwise) and place them in a disposable aluminum pan. Drizzle with olive oil or spray with cooking spray.

I've never frozen them, but OOTBubby freezes a similar recipe successfully.

Cottage Fries
Quick and easy Breakfast Recipe — a family favorite here and I make them often. I bought a 12" frying pan just to make these. My frying pan holds about 3 potatoes worth of cottage fries.

Ingredients:
Cold already baked potatoes. Keep them in the fridge. All varieties seem to work.
oil
Pam or other cooking spray
salt -- I use diamond kosher salt

Take cold baked potatoes, about one per person, and peel off the skin. Cut into thin slices. Coat a large frying pan with Pam and add a little oil, about half a Tablespoon per potato. When the oil is hot, add the potato slices in a single layer. Sprinkle with a pinch of salt. When the potatoes are golden brown on the bottom, turn them over to brown the second side. Serve. Say a bracha. Eat. Enjoy.

Edited to make a correction in the recipe

I got the recipe from somewhere else on this site and the basic idea is

a few potatoes cut in cubes
ketchup
a bit of oil
salt, garlic powder, onion powder, sugar, chili powder, paprika to taste

Toss to coat well in a Ziploc and bake on a cookie sheet at 400, mixing every once in a while.
