I agree with this
I was raised eating gebrochts
I do NOT like matza brei, matza pizza, matza kugel, matza lasagna. I find it to be dense and soggy (especially because we only use shmura).

Married we don't eat gebrochts and I don't miss it at all. I once made knaidlach, but I really didn't like the shmura matza knaidlach.
Acharon shel pesach, I enjoy just putting things on my matza- dips, fish, eggs. Usually we don't do that.

I don't really get the big excitement about acharon shel pesach and gebrochts. I don't really feel like I'm missing much

Why is it OK to eat gebrokts on the last day? If it's chometz then it's chometz, no? I have been wondering

It's not chometz. It's a chumrah. On Achron shel pesach we don't keep all extra chumros.

We don’t want to chas veshalom make it look like we consider other Jews sinners. By eating gebrochtz the last day we show we only thought of it as a chumra and all the other people who eat shruya are good Jews too. Yom Tov sheini is derabbanan and not eating shruya is a chumra so there’s some leeway to allow us to eat it the last day. There’s a long halachic discussion on how it doesn’t mess up our keilim because a full year doesn’t pass until we use them again but I’d rather not try to answer that one.

ETA shruya is gebroktz. One is Hebrew one is Yiddish.

Daphne, you should use water, it absorbs more.. but I never thought of milk, I’m sure for a milchig meal it wouldn’t hurt to try..

We make our matza brei sweet!
Soften 3 crushed matza pieces with some hot water until fully absorbed and softened
Add a splash of sweet wine or apple juice
3-4 eggs, salt sugar pepper
Fry and keep mixing and breaking it up until it gets crispy and like crunchy farfel
My kids sprinkle some sugar or Jeremy raspberry syrup
