In my family too. I Sautee onions until nice and golden. Break up matzo into tiny pieces. Add to the onions. Salt and water. Cook until water is absorbed.

We eat gebroks.
IMO, the only good gebroks are matza brei, kneidlach and spreads on matza.
The rest is usually trying too hard.

I know I am very out of the norm here but I really do NOT like matzah brei— I don’t understand how people do. It’s like all soggy and ….
