Coconut bars
2 1/2 cups ground coconut (either sweetened or unsweetened)
2 beaten egg whites (not stiff)
1/4 cup sugar
Mix in a bowl and then spread in a greased 9 by 13 shallow pan. Bake at 325 for about half an hour. Pretty good!

chcolate ganache would be lovely with just about anything! I especially lilke these bars because 1. they don'thave many carbs (I'n diabetic) and 2. you don'tjust eat coconut on its own so it's a treat and 3 it's not using very processed ingredients.
