Just wanted to share, came out delicious:
Be sure crust is thick enough, baked until golden. Used handheld mixer to stiffen eggs up a bit (around 5 minutes). I used maple syrup instead of honey.
I left out the lemon zest.
Did half fresh lemon juice, half bottled.
Baked longer than recipe called for, till nice & golden on top & set well.

Looks delicious! Can I use something instead of the coconut oil? I don’t like anything remotely coconut

I forgot to note that actually. I happen to like coconut oil, but am trying to buy less ingredients Pesach, & I used light olive oil
