Anyone have a good broccoli kugel recipe?

Do you use matza meal? If not you can sub with potato starch(that's what I do)

1-2 large onions
2-3 bags broccoli
4 eggs
Potato starch or matza meal (1/4-1/3 C or as needed)
Spices (onion, garlic, salt pepper)

Saute the onions. Add the broccoli and cook until soft and most if the water is evaporated
Pour into 9x13 pan
Mix in the potato starch and eggs, adding more potato starch as needed until you get a mixture that can hold itself together.
Mix in the spices

Bake @400 covered for 1 hr, uncover for another 20-30 min until crispy at the edges


I make this during the year with matza meal and it freezes beautifully. I never tried freezing the pesach version but I can't imagine why it wouldn't...

I do my regular recipe with almond flour instead of regular.

Bag of broccoli (chopped up)
1/2 cup of mayo
1/4 cup of onion soup mix
3 eggs
1.5 TBSP of almond flour
1.5 TBSP of oil
Garlic powder

How many ounce bag of broccoli do you use?

2 bags if it's a 32 oz bag. 3 if it's a 24 oz bag
Don't use cuts (or at least do half n half)

It's a very flexible recipe
