We don’t eat meat the night of the Seder, I’ve never heard of it being allowed!
We only eat chicken cooked in water/broth/sauce

As long as it’s not roasted, meat is allowed. I put club steak in a pot with water, spices, and vegetables, and boil it until it’s soft.

You're not supposed to really fill yourself up with food, as you should be hungry for the piece of Afikomen matzah.
You also shouldn't be eating any mean/chicken that was roasted.

We eat, karp gefilte fish, salmon, chicken soup with egg lokshen, chicken from the soup, meat from the soup, chremslech and compote.

That all sounds pretty filling to me…especially so late at night.
