I usually do
Gefilta fish
Chicken soup with egg lokshen
Baby chicken (I use this cuz it hopefully won’t get overdone on the blech) in homemade duck sauce
Potato kugel

Fish balls
Cucumber Salad
Tomato dip
Babaganoush

Soup course:
Chicken Soup with chicken balls

Main:
Tzimmes
Lemon shnitzel made in instant pot
Golden potato chunks with oil and salt

Dessert:
Grape Juice ices

(My family does not get full from matzah and maror and will be hungry if I don't serve a full meal.)

My menu:

Gefilte fish, salmon, chicken soup with lukshen, homemade potato salad, Cole slaw and maybe cucumber salad. I then serve a little chicken and a veg kugel. It's more than enough.

Does no one else start the meal with eggs in salt water?

Eggs in salt water
Gefilte fish and salatim
Soup and kneidlech
Schnitzel, and potato kugel, with a cooked vegetable
(If there's time before chatzot, and there normally isn't, compote and Pesach cake.)

If we're running late and it's getting close to chatzot we might skip a course or serve two courses at the same time. It works.

We do very simple:

Chicken Soup

Chicken
Potato Kugel
Cucumber Salad
Cauliflower Rice
Brocolli
- maybe one more thing

Ices/Ice Cream Dessert

Dessert - apple crisp

No salad as everyone has had enough lettuce!

Cooked on the stove top over a lot of sautéed vegetables in a wine sauce.

We serve everything in 1 course because we're usually out of time and rushing.

I also don't serve chicken soup. I find it temporarily fills but leaves people hungry in the middle of night or during davening the next day.

I do either deep fried schnitzel (only time a year I ever make it and it's a family favorite)
Chicken Roast in Duck Sauce
Or Pastrami Roast
These are our families favorites.

Also
Potato kugel
Apple kugel
Tzimmes
Cucumber salad
Roasted veggies
