Blanch them first. Boil it in hot water for a few minutes, dump into ice water, drain, dry and then freeze. I did this with sweet potato and it was delicious. I can see it working with regular potatoes as well. It's like the frozen fries you buy just fresher.

They become black and horrific. You won't want to go near them.

I tried that with potatoes before a birth. They were so mushy and crumbly just totally horrible and nobody wanted to eat them.
Sweet potatoes were fine. A whole other animal.
