That's very special of them that they invite you for the entire yom tov. Free hotel. I would not be bothered by the fact that they are different than you as long as they're not nasty. Consider yourself extremely lucky that you have the option to go. Make sure to appreciate all their hard work.

I would probably go, TBH. It sounds like you understand how your families are different and are prepared for that.
Can you give an example of something that might be an issue?

For me it would depend on the expectations, but it sounds like they don’t expect you to conform to their ways
Personally I have a hard time spending too much time in one of my parents houses over Pesach, because they do things that are not to my standards and make me feels uncomfortable
My in-laws, we do not go for extended periods of time because they are more strict about certain things and pressure DH to follow (nothing to do with pesach- for example going to shul 3x a day or learning daily which DH just doesn’t do)
