I am married many years and have made many potato kugels. No matter what I do, the top of my kugel always dries out/cracks when baking. How do I get the top to be nice and smooth instead of dried out and cracked? What am I doing wrong?

After it gets a nice color cover it very tightly with foil, either with heavy duty or a double layer of regular. It won’t come out dry

You probably need another egg or more oil.
