I'd like to put up challah last minute and the high gluten flour I have comes out to under 5 pounds. Can I add a little over half a pound all purpose flour? Or will it alter the dough too much?

It'll be fine. I use all purpose flour sometimes to make challah and it comes out delicious.

I found that for the fluffiest challah, proper rising and making sure the yeast was room temperature ( I keep it in the freezer) made more of a difference than the flour.
