Many prob majority of people aren’t makpid on yoshon.. if they have a hechsher -I think it’s ou they are kosher but kosher and yoshon are not the same thing

Yes, I use them all the time. Don't keep yoshon.

Interesting halacha I learned that if dough is kneaded by a g*y but baked by a jew, as in this case, you do not need to take challah from it.

Until at least August 20th this year, wheat products can be purchased without worrying it was using flour from after Pesach (unless you're in the Midwest and it's a freshly baked item, but Rhodes isn't that)

But the bakeries do take Challa,
even though their workers are making the dough..maybe it has to do with ownership, rather than who kneads it?

Are you from Israel?
I believe Yoshon is a Kosher requirement in Eretz Yisroel; and if it’s not Yoshon (when Yoshon applies), then it wouldn’t be Kosher.
But outside of Eretz Yisroel, Yoshon is not in this same category of Halacha.

My mom is in Israel and she taught me we only use yoshon flour
My in laws use Rhodes dough and I was wondering if I can have

You follow your husband’s minhag. If he’s not makpid on yoshon then you follow that .

It’s also different in Eretz Yisroel vs out of EY.
In EY it’s an absolute requirement. Out of EY, it isn’t.

Non heimish products typically don't say whether they are yoshon ( and not all heimish products are labeled). You have to look at the dates yo determine if it's yoshon or not.

Yoshon "season" is only barely starting. The vast majority of things are still yoshom.

As posted above these are still fine this week. You can always check yoshon.com to find the latest info and dates when specific companies start using the new wheat as even once yoshon starts some products are still yoshon.

I just bought these for the first time, so I need to take challah from it? It’s a bag of 72 frozen rolls

From Star-K website

If the dough was kneaded in the possession of a gentile, and the Jew then acquires the product, there is no obligation for hafrashas Challah.
For example, Challah is not taken from bread or cookies manufactured by a non-Jewish company, even when a Jewish customer buys them.
The same is true when one purchases frozen dough kneaded while it was owned by a gentile. However, if one purchases dough that was mixed/kneaded while it was owned by a Jew who was not mafrish Challah, one must perform hafrashas Challah as soon as possible.
