I’ve made yogurt cake many times before and never refrigerated it. Has cake consistency not runny. But I make sure that everything is sterile and I cover it. Eat within 2 days

Why do bakeries keep cheesecakes in the fridge section? That cheese is also cooked

If you mean the batter has yogurt as an ingredient, it doesn't need to be refrigerated any more than baked goods that use milk or sour cream (very typical) ingredients need to be refrigerated.

FWIW do not refrigerate any baked goods like cakes or bread as it causes them to get stale quickly. If you need to store, then freeze it wrapped well

Obviously a cheesecake should be refrigerated or a cake with cream layers like a strawberry shortcake because the cream is not cooked.

But the creamcheese is cooked when it's baked. I don't understand.

Because of the high moisture content. Milk that is pasteurized also needs to be refrigerated. Mousses and puddings need to be refrigerated for safety.

Also if you don’t refrigerate a cheesecake, it will collapse.
