You could use a regular recipe with the pareve milk of your choice. You could also sub with apple juice and add some cinnamon to the batter.

Not a recipe but just fyi we like birch benders plant-based protein pancake/waffle mix, can get online or at Whole Foods. It's O-U pareve

1 cup flour
2 tsp baking powder
pinch salt
1/4 cup sugar
2 eggs, lightly beaten
1 cup parve milk
4 tsp oil
Combine flour, baking powder, salt and sugar.
Mix together eggs, milk and oil. Add dry ingredients and mix with a fork until you have a slightly lumpy batter.
Heat a greased non-stick frying pan. Drop spoonfulls of batter in small circles. When small bubbles appear, flip over and leave on second side for less than a minute. Repeat with remaining batter.

As a general rule I just sub soy milk for cow milk in recipes. And it works just fine.
