What should I make for Rosh Hashana?

I am possibly the worst/least interested cook in the world.

Working full time with multiple toddlers/baby in my house and caring for a disabled adult relative.

I have off of work Eruv Rosh Hashana.

Any ideas of what I should make that will let me spend the minimum amount of time in the kitchen?

Well, being that 2 meals are shabbos you can prepare whatever you usually eat on shabbos for 2 of the meals- Chicken, chulent …
For the other 2 meals you can make a roast with potatoes or rice and use it for both meals with whatever you have leftover from shabbos.
To make things more exciting, you can make a fresh salad before a meal or two.
If you really don’t want to cook you can always buy some cold cuts with potato salad and coleslaw and a store bought kugel if your family would appreciate that.
