I think k it is better to beat the farmer cheese smooth.
It will also get smoother during the baking.
Adding some sour cream or vanilla yogurt to the farmer cheese makes it smoother.
Vanilla makes cake taste sweeter

its not only taste but the effect it has on the baking...
how much would a 1/3 less than a half be?

I made it with xylitol and used less.
I mixed the cheese with a spoon until it was no longer lumpy.

If you want to use 2/3 the amount of sugar, you would put in 1/3 cup.

I dont understand - the recipe is a half cup how much less can I put in?

Instead of 1/2 cup, you put 1/3 cup.

the best farmer cheese cake is Rebbitzins cheesecake. Recipe got its name from the late first satmer rebbitzin. I don't have the recipe off hand but it has 3 pounds farmer cheese. crust is just crushed vanilla cookies that doesn't get prebaked.

its in the oven now. after 30 min it still looked raw no golden on top. left it in already another 10 min and its blowing up - rising.
why? is this normal?
its on the lowest rack in toaster oven.

Should bake around 40 minutes.
Cake gets firmer after refrigerated.
But cheese cake is soft and creamy.

40 min in total but I baked it without the topping so isnt it 30 min?

No, without topping is around 40 minutes,
