Crustless because you don't want to deal with crust or because you don't want gluten/chametz?

I have an Israeli recipe for such a cheesecake, but it does contain some white flour. https://www.carine.co.il/foody.....7%9F/

I had a kosher for Pesach one once and it was delicious, but never found recipe.

I dont want to bother with a crust.

but I want a farmers cheese one.

Okay, then the one I sent you should work! גבינה לבנה is farmer cheese. If you don't know Hebrew, try to use Google Translate, and if you have any questions you can ask me.

I don't think Gvina Levana is the equivalent of farmer cheese. I think Gvina Levana is Quark cheese. Very,very different textures.

I have a recipe that’s 3 eggs, 1/2 c sugar, 1tbsp vanilla sugar, and a pound of farmer cheese. Topping is vanilla yogurt. Not sure about bake times. Will look up the whole recipe if it sounds interesting, but I’m at work now.

2 cream cheese
1 small sour cream
3 eggs
1 cup sugar
1/4 cup milk

This is a good recipe

1 lb farmer cheese
3 eggs
1/2 c. Sugar
Vanilla

Optional: add some vanilla yogurt or spur cream + sugar

Beat longer for a smoother texture.

Pour into 9" round pan.

Bake 350 for 30 minutes.

Remove and add topping

Vanilla yogurt

Or

Sour cream mixed with sugar (my preference).

Spread topping

And Bake for another 10 -15 minutes.

sounds good -does it need the topping?

do you bake this on convection or convention?

The topping is optional.

Topping is my favorite part, but you do you.

If you skip topping, baking time is around 40 minutes.

I skip the graham cracker crust.

For best results, watch that cheese cake doesn't get brown spots (over bake).

does the topping have to be baked?
if I put a diff topping that I use for a diff cheescake?

Doesn't HAVE to be baked, but baking is better.

Baking makes the topping drier and firmer and more like cake and not like sour cream or yogurt.

You can put other topping like cherry pie filling

Or caramel syrup.

Put YOUR favorite topping.

is it better to leave the farmers cheese more lumpy and unsmooth or whisk/beat to make very smooth?

can I use less sugar?
