Help! Did I ruin the meatloaf?

I just put a meatloaf in the oven. It called for one onion finely diced. I didn't saute it. Did I just ruin the recipe?

Yes. Thanks for responding! It's in the oven for an hr and the onions are still crunchy.

You didn't ruin it because it isn't going to have the same result as it would if you had sautéed before adding. The onions are not going to "mush" into the meatloaf because roasting inside of a meat doesn't provide the same cooking process - also the onions themselves are not going to be as delicious because you don't get the caramelization process that you do when you saute onions and some of the carbs turn sweet - a cooked onion is sweet versus the extreme bitterness of a raw onion.

I always add raw onion into my meatloaf and meatballs. It tastes good!

Same here, and when I make hamburger patties, too.

Great tip if you accidentally overcook and dry out your meatloaf. Dice it into cubes, mix with tomato sauce, and let it simmer for a bit. The sauce will make the meat moist again. Serve it over wide noodles.

If I use raw onion in the mixture, I grate it so it's soft and melts into the meat.
