How do I make a silky smooth puree of any veg., potato or butternut squash or anything else to plate under a pc of meat?

Blender. Food processor. Maybe add some coffee creamer. Strain out lumps.

How silky do you want your puree to be?
You can make a delicious "puree" but it won't have the absolute silky texture of the kind served in a high quality restaurant because they don't simply blend the vegetables but put the vegetables through a food mill which produces a smoother result. Sometimes it will also be strained through cheesecloth to get out further lumps.
