Could it be there was not enough room in the pot for that many kneidlach to grow? And/or cover was lifted mid-cooking and wasn't kept shut.

If you used the same recipe then you probably had it sitting too long.

Too much matzo meal?
I do a scant cup for each cup called for.
The batter should be very wet

It's all a matter of taste, I don't like it fluffy, only firm

I use baking powder.
Some use seltzer insteadif water.
As other posters said, minimum matzo meal and room in pot.
