I've done ground beef/turkey wine sauce before. I don't have an exact recipie, but I saute some onions and/or mushrooms, then the meat, then I add wine and reduce it down. It does tend to come out a bit on the liquid side, but tasty. Depending what wine you use, it can also come out a bit sweet.

You can google for a mock tomato sauce, usually consisting of lots of sauteed onions, some combination of carrots, sweet potatoes, butternut squash, and a little beets (can be from a can) for color. If you use enough onions, you can almost be fooled.
You can also do a Chinese type of onions, mushrooms, celery, soy sauce (throw in water chestnuts, baby corn, bamboo shoots. broccoli if you like 'em) over rice or spaghetti.

You can make your meat sauce with:
taco seasoning
canned pure butternut squash puree
carrot sauce
cranberry jelly
brown sauce
mixed with mushroom sauce
