Anyone know how I can do that? I can't get wire chafing stands and I won't have an oven to keep it warm or even warm it up. Is it even possible?

a bains mari is a "water bath" its an electric thingy that holds any number of non disposable pans suspended over hot water,

how about just keeping stuff wrapped up atop the hot oven ... so the heat rises and then take out as needed

A bain-marie doesn't have to be electric or candle-powered. You could rig up a non-electric version by taking a deep steam table tray, filling it with boiling water, and placing the pans of food you want to keep hot on top of it (or in it).
