ok I'm embarrassed but I really don't even know what type of yeast I'm using
I buy these big packages of yeast -- what type is it ?
fresh or dry and how does it compare?

if it's powder - it's dry
if it's cake-like - it's fresh
they both do the same thing as far as baking - you just need different measurements
3 of the 1/4 oz dry packets = to 2oz fresh yeast

For each 1/4 ounce packet, use approximately 2 1/4 teaspoons from the large bag.
