I fry some onions, add the salmon, season with salt, pepper, paprika, garlic powder and soy sauce. Add a but of water, and when the fish is almost ready, add some frozen green beans. DH loves it.

I usually pan-fry salmon so that I can drain off extra fat. Seasonings vary.
* make marinade from orange juice, soy sauce, a bit of ground pepper/fresh ginger.
you can add honey if you want it sweeter. marinade for min 1hr, then pan-fry. You can
add marinade toward the end to make sauce.
* sprinkle salt and cracked pepper. Pan-fry.
* coat fillets with mixed spices (grainy mustard and dill are nice. or paprika and dill. or fresh chopped tarragon). Pan-fry.

salmon fillets on stove:

dip ea. fillet in egg, then in ground nuts mixed with a little salt. Place in a pan with oil skin side down (or flat side down). Cover pan. Drizzle a little honey or syrup on fish when done. this is basically my pesach salmon recipe (I use sugar "syrup" instead of honey, etc). I prefer ground almonds.

Yum, these all sound great!

CM, I can't find the thread... I tried looking through your posts but you have tons of pages of posts so it's hard to find!
ra_mom I'd love both of those recipes when you get a chance.

Cream Sauce Salmon
• 1 lb. salmon filets
• 1/2 cup water
• 1/2 cup vinegar
• 1 cup lemon juice
• 2 Tbsp salt
• 2 cups sugar
• 1 onion
• 4 Tbsp mayonnaise
• 4 bay leaves
• 1 Tbsp pickling spice

Combine the vinegar, lemon juice, salt and sugar.
Divide mixture in half.
Add 1/4 cup water to each half.
Place fish in a large pot with half of the mixture. Heat the pot to boiling. Cook fish in covered pot for 11-12 minutes.
Pour out the seasoned water.
Add the mayonnaise to the other half of the mixture. Mix well with hand blender.
Layer sliced onion on bottom of fish container. Place cooked salmon on top. Pour the rest of the mixture containing the mayonnaise over the fish.
Place bay leaves and pickling spice in a cheese cloth. Add the cheese cloth to the container, making sure it it covered in sauce.
Cover and refrigerate for a day or two before serving.

I will post the sweet and sour recipe soon.

Pickled Salmon
1 cup vinegar
2 cups water
1 onion, sliced round
3/4 cup sugar
1 Tbsp salt
1 tsp whole cloves
9 bay leaves

Bring water to a boil. Add vinegar and onion. Cook for 15-20 minutes. Add sugar, salt, cloves and 6 bay leaves. Cook for another 5 minutes.
Add salmon. Cook for 12 minutes. Turn off flame. Add 3 bay leaves.

Note about cooking any salmon: Allow the salmon to cool completely before trying to handle it. Otherwise it will break apart. Once completely cooled (or even cold), use disposable gloves to transer salmon out of the pot. Using utensils instead might also make the salmon fall apart.
