This was a big hit last night.
1 cup flour
1 T. lemon-pepper seasoning
1/2 tsp garlic powder
1/2 tsp baking powder
1 T. oil
1/2 to 3/4 cup ice water (I used more)
1 lb flounder fillets
Whisk the flour, lemon-pepper, garlic and salt. then whisk in the water to make a smooth batter. Refrigerate for at least 20 minutes.
Heat oil in skillet (several inches). Cut fish fillets in half. Season with salt and pepper.
Dip fish into batter, let excess drip off. Carefully place fish in hot oil.Fry until golden brown, turning over with tongs.
Remove, drain on plate with paper towels.
Serve with tartar sauce and lemon wedges.

that sounds yum!! If I don't have lemon-pepper, do you think some lemon juice and pepper would be ok?

I didn't have lemon/pepper so I used black pepper and some lemon peel. Lemon juice would be fine, I think.
