does anyone have a good recipe?
I would prefer not frying it but my priority is that it tastes good.

I found turkey schnitzels tend to come out a bit tougher than chicken. Make sure you pound pieces well so it's really thin. I marinate them in a bit of salad dressing to give good flavour (15-30min will do). Dip pieces in egg and coat in breadcrumbs/matzo meals seasoned with salt, pepper, paprika, parsley etc. You can coat foil pan with oil spray, place the schnitzels in one layer and spray some more on the top and bake in the oven.

Sounds yummy, how long do I bake it for?

Normally I just cook in a frying pan (like 2-3min each side, I pound them quite thin).
I would use fairly high oven temp, pre-heated. My oven heats uneven, but suspect 5min or so each side should be enough. Just cut a piece to make sure it's cooked through.
