Super Tuna Vegetable Patties

a spin-off of the super salmon patties recipe in the "Spice and Spirit"

boil 1 potato, 2 carrots, 1/2 zucchini until very very soft
(you can peel them first or peel them once theyre cooked.)
mash vegetables together (easier when cooled but can also do it hot)

2 cans tuna (6 oz.)
1 onion diced
1 stalk celery diced (optional)
1 cup matzah meal
2 eggs
salt
pepper
garlic

combine tuna mixture with vegetables- mix well.

form into patties and bake at 350 degrees for 1/2 hr-45 min.
yields: 10- 12 medium-sized patties

you can fry them if you want but baking them is less fattening.
kids love them! and adults too!
warning: do not do this recipe in a food processor! it is disastrous (from experience)

The recipe sounds good but I have heard a lot of research on not giving kids and expecting mothers too much tuna. This is b/c of the high levels of mercury in the fish. This scared me so much that we don't eat tuna at all.

you know, I head that too, but not about tuna. I heard it about shark, real sushi, and other ones I wouldnt imagine eating.
how do we know what is too much tuna? this recipe is only two cans, which is what I would prepare anywayfor a regular lunch.

freah tuna has high mercury levels.. for some reason and I cannot figure out why, canned tuna is okey to eat more often.

I read in the prevention magazin and parents that u shouldn't have more than I can a week, this applys not only to pregnant women but to everyone b/c it is high in mercury but the recipee does look good.

anyway the way it turns out- lets say each person eats 4 patties, its still not 1 can of tuna.

If you are really in a rush, then all you need to do is open and drain canned tuna add egg with abit of flour, season mix well and fry and kids just love it..... embarrassed so do I!
I also heard that thing about tuna and fish but I am not as concerned as the other junk and stuff out there.
Such as useing a microwave ...... I know my mishegas Exclamation

My OB told me to limit tuna/flounder/salmon to about 1 serving a week. Most of the other fish(es Smile ) w/ high mercury levels aren't kosher. stay away from raw fish, too (ie. real sushi). Gefilte fish is fine, though! It's not as much of a problem for other (non-preg.) adults or children because the mercury is something that affects the fetus development.

There is mercury in all fish. The reason it's a bigger deal in tuna is tuna is so big which means there is more mercury (per square inch. Very Happy) I do tryy to eat salmon for the omega3.

there was a very informative article in readers digest a few months back.
basically mercury levels in fish are rising because of the pollution in our oceans. the larger the fish get the more mercury has time to accumulate in them. using fresh tuna steak is really not good where a can of tuna should be limited to a can a week for pregnant and children. mercury damages the groeth of anything so a fetus may be damaged and the same for a small child. regular adults are not affected so quickly but long term intake has bad effects too. so you do need to be wary and limit the mercury level intake for your family.
mackarel tuna and any other big fish that come from the ocean are all high risk.
read up on it- this is one thing you can control.
flounder is an ocean fish but they don't get big so its not so much of a problem, salmon is fine no problems at all because usually they are farm raised and they have no mercury in them. the ocean ones which are so much more expensive you need to ask. but since they too are small fish also not so mucha problem.

I have heard farmed salmon is bad for other reasons. That its better to eat wild salmon than farmed salmon.
