Vanilla Chocolate Ice Cream
2 cans regular coconut milk-not low-fat
6-8 tbsp agave nectar or any neutral-tasting sweetener, to taste
1 1/2 tbsp pure vanilla extract
2 ounces melted dark chocolate or choco chips
Pour the first three ingredients in a freezer-proof container and mix well. Put in freezer.
Take out every hour and mix well to break up the ice crystals, until semi-solid. When it feels like soft ice cream- after about three hours of freezer time-drizzle in the melted chocolate while stirring to incorporate well into the mixture. Freeze, take out 30 min. before serving to soften.
If you have an ice cream maker, just pour in the mixture.
This is sooooo good, and much better for you than soy ice cream or rich's whip creations...It's really rich tasting and creamy and yum.

This is coconut milk, not that thicker coconut cream like used in pina coladas?

I used plain coconut milk.
it has enough creaminess to make a delicious ice cream.
this should work with coconut cream too, but you'll probably need less sugar because coconut cream has some added sweeteners...let me know if you try it!

This sounds great! Dd can't have milchig or soy ice cream.
