Boil drain mash add back in few spoons cooking water and oil. Add crushed garlic, salt and a lightly beaten egg while potato still boiling hot and it becomes fluffy and creamy.

Sautee onions and garlic low and slow. Add to potatoes. Add a tablespoon for 2 of margarine. If you have a ricer mash it that way. If not , mash it regularly and then hand blend.

Peel potatoes and boil. Mash. Add sauteed onions, salt and pepper. When you mash the potatoes, leave some of the water that you boiled it in.

I second the ricer mash. If one is doing lots of mashed potatoes or sweet potatoes it's absolutely worth to buy one. A bit bulky in size but excellent results.

I used to have one for pesach only. Until my kids started requesting the pesach mashed potatoes.

Do not overcook the potatoes, it changes the texture.
Cook till just about ready, close flame and cover, letting it steam for a bit.

I know some people who like their mashed pot very wet, while others like it drier. So many variations!

Another variation I forgot to mention I sometimes do (my mil does it this way) is too add a bit of the liquid the potatoes cooked in. Gives it a very creamy texture.
