Can you post some soups that just Require some vegetables…… spices…. Nothing with a lot of salt or soup mixes…. I tried a vegetable soup but I always mess up it tastes so good with the split pea soup mix but I need something that doesn’t have the garbage in it . Thanks!

the only way you will get a good soup without soup mix is with real fleishig broth, make your own broth with chicken and meat bones and add it instead of water to the soup. I once had a parve soup that was good if you fry a lot of onions and garlic and put parsnip/celery in the soup

No need for garbage in soup getting used to salt free is an adjustment. Use lots of oniins and fresh garlic to make up for it

Regular chicken soup
- frozen buttnerut squash
- peeled carrots and cut up carrots
- onion
- sweet potato
- zucchini
- garlic cloves
- chicken
I add tons of spices (garlic, onion, parsley, oregano, etc. Really whatever I have. Hawaiij for soup also great)

Here’s my recipe:

1 large onion
1 head garlic
2 zukes
4 carrots,
2 sweet potatoes
2 regular potatoes
1 c oat milk
lots of water
salt
black pepper
basil
ginger

Sauté the first four ingredients, then add the spices. Once they are all starting to get soft, add the milk in the water, then the potatoes. Let it reach a rolling boil, then simmer until everything is super soft. Blend afterwards.

A good idea is to roast the veggies beforehand it gives it a deep delicious flavor

You want split pea vegetable soup from scratch without the split pea soup mix?

Butternut squash
2-3 Onions
Few carrots
Sauté

Add water and a cup of orange juice and salt and pepper to taste

Blend

Everyone loves this one!

I make a soup with zuchini, carrots, celery, potatoes, a whole onion and chicken. In a pot the whole day with just salt pepper and turmeric, it's so simple and so delicious.

Also butternut squash soup is very flavorful (but you need to roast the squash in the oven first)

Zukes are zucchinis. Miso is a paste made of soy. Not sure about Koji…

There is a brand of soup base called "Imagine". (Available in NY area and I don't know where else). It's made from vegetables. No MSG etc. I start with that and add vegetables, barley, lentils.

I never add soup mix to veg soup and it's always delicious.
Start with sauteeing onions depends how big the soup is but let's say 4 quart I'd do 3 onions. Sautee then add your main veg let's say zucchini appx 3lb and Sautee with the onions for 15 min. Then add 1-2 potatoes, 3 carrots, water, spices salt garlic black pepper. Bring to boil and simmer for half hour. Blend. Taste. Add spice as needed.
Main thing is not to make it too watery. Thick but not baby food. You can do this with any vegetable.

Learn how to make different broths to be the liquid instead of water in the soup. Vegetable broth, chicken broth etc.
And use spices!

The only way I eat vegetables which I don't like very much is blended in a soup.
Here is my recipe.

Fry 1 large onion with 1-1.5 tablespoons oil on fairly high heat till the onion is well done about 5 minutes. In that time I chop up 4 carrots, 1.5 sticks celery, 1 small butternut squash and 1 medium parsnip.
Add the vegetables to the pot of onions together with about 5-6 cups of water and a tablespoon of salt. Lower temperature and simmer for about 1 hour 40 minutes.

Enjoy.

Soup #1
Blend in food processor with a blade and
Saute until see through:
a large onion
A parsnip or petrishke
2 stalks celery
Half knob celery
Half yellow squash with peel

Blend with a Hand blender until it turns into a sauce. This will serve as the base.

Cut into small pieces the following vegs:
( you can also use the food processor with any of the larger size pieces . I use the one that cuts into thin 1" long pieces. I don't know what it's called)
A green squash with peel
2 carrots
2 yellow squash with peel
2 celery stalks
2 parsnip or petrishke
Salt and pepper to taste
Saute in separate large pot until the vegs become soft. Add the first set of vegs with enough water. Cook for a few minutes to half hour until the two sets of vegs become incorporated in to each other.
Enjoy. Hearty appetite
