In search for a 100% whole wheat or whole grain sourdough recipe.
Tried swapping out the regular wheat in my recipe to whole wheat but it did not work. It was very dense and did not rise enough and or puff up in oven

It’s almost impossible to get whole grain sourdough to be fluffy
Would you consider multigrain?

I do 2/3 whole wheat (I use sprouted wheat)
It’s a drop flatter than with only bread flour. Tastes delicious
And use my regular recipe
I feed the starter with regular bread flour
