Freezing raw challah dough

Anyone ever freeze challah dough raw?
I’m thinking to make dough today and shape and bake another day.
Will it turn out ok?

Make the dough and form the challah, then freeze them raw.
I do it all the time.
Don't freeze it before you form the challah.
I take it out on erev to defrost and bake it fresh and it's delicious.

Do you let it raise once before braiding or do you braid as soon as the dough is done?

dough freezes great but don't freeze it forever. the yeast can die after about a month

I did this in the summer . Followed all the "tips". Highly disappointed. Tasted totally different and definitely didn't rise same. Truly disappointed

I made round challah in July and froze, they didn’t rise well now for Rosh hashana.it came out tiny and dense. but I once froze braided challah of the same recipe for only a week, and it rose beautifully, but the texture and taste was a bit different.
I think I’m baking right away from now on, and freezing ready baked challah, even though I was really looking forward to be able to have fresh challahs baked on yt! And boy did I enjoy the freezer space, takes up 1/2 the space!

I wasn't very successful. The challah wasn't terrible but it wasn't great. And I had used a recipe designed, supposedly, to be frozen, with extra yeast to make up for the percentage that dies in the freezer, and didn't freeze it more than a month.

I’ve frozen challah dough before and it comes out great. I use gallon freezer ziplock bags. It’s also important to know that if you’re not baking 5lbs immediately when making the dough, some hold that you shouldn’t say a Bracha on the Hafrashas challah.
