If you wait till the last week, They will already have plans. You Can start asking now for Rosh Hashana. Even Succot. This way others know what they need for the Chag.

People make plans a month in advance. If you don’t ask early enough they might have other plans already.

2 weeks in advance. I find that the more in advance you invite, the more people's plans change or they forget about the invite, or they forget to give you a definite answer ....

I would do a 'like to invite you for a meal on succot' far in advance so you're on their radar, then follow it up slightly closer to time for a specific meal.
I know for myself I can't know now whether it would work for me to come for that specific meal so far in advance, but I can say I'd like to come for a day meal, and then we can work out which day closer to the chag.
