Does anyone have a good source for high-quality gourmet pareve dark chocolate for baking/melting? Something you'd use for chocolate mousse, drizzling on cookies/cakes, dipping strawberries, etc. Any recommendations for a brand that is better than the typical grocery store options?

I'm no major baker and don't know about gourmet chocolates but I personally like Shufra baking chocolate the best over other baking bars when making something for simchos or purim or yom tov etc.
I like the flavor, I don't find it too sweet like some other ones, and it works well with whatever I'm making that the flavor of the chocolate makes a big difference. Chocolate covered sandwich cookies, chocolate + peanut butter covered pretzels, graham crackers/marshmallow fluff, etc.
Not sure about for a mousse though. I think a relative of mine used to use Schmerling's Noblesse chocolate bars for mousse.
