Best way to make meatballs?

Planning to make a big batch of meatballs next week for YT.
Is it better to cook them in the sauce or bake them and then add to sauce?

I always brown them a bit in the oven (broil) and then cook them in the sauce.

Do you cook them all the way through in the oven? Do you add the drippings to the sauce or not?

Not all the way. Just brown them. I usually do like 8-10 mins under broil and then dump into a pot with sauce with all the drippings.

It's totally fine freeze the meatballs all cooked and ready in the sauce.

I bake them and freeze with no liquid then I can serve it with any sauce I feel like. I don't want to be locked in.

Magic meatballs. Bind with potato starch 2.5 tbsp of starch plus one egg to every pound of meat. One can of tomato sauce. Multiply as needed. It’s magic because no matter how many you make it always disappears

A lot of recipes come from different cookbooks or googling but some things I like:

1) Pesto either make your own or use jarred

2) Tomato sauce either jarred or homemade

3) Sweet and Sour my mothers recipe uses lemon juice, tomato sauce, brown sugar

4) Miriam Pascal has a sesame chicken meatball in her book

5) I made Mongolian beef meatballs so was meatballs and the sauce typically used for that dish

One year I got kidney stones erev pesach and my kids cooked everything. They asked my neighbor for an easy sauce for meatballs and it ended up being a HUGE hit. Cranberry sauce and tomato sauce I can’t give you a recipe but adjust to taste depending on hire many meat balls your making
