It tastes kind of like bland salmon. Does anyone have any good recipes?

Rainbow trout seems to taste better pan-fried instead of baked. Always put the skin side down first, and cook till the skin gets crispy, then turn with a spatula to cook the "meaty" side.
dust lightly with seasoned flour (best way to use up leftover matza cake meal) and pan-fry.
You can just use salt, pepper, paprika for seasoning. Or sprinke both sides with chopped parsley and garlic then pan-fry. It's also nice plainly pan-fried topped with toasted sliced almonds--twist on classical trout almondine, maybe with a squeeze of lemon right before serving.
If you want to broil/bake in the oven, you can try teriyaki sauce (or use 2 part OJ and 1 part soy sauce, a very small amount of honey, or a bit of sweet chili sauce). Or simply poach and serve cold with green mayo (whizz 1 clove garlic, a handful of cooked spinach or fresh watercress and mayo) or lemon mayo.
Lovely with simply boiled baby potatoes in season and with green beans/runner beans/baby peas!

OP, buy or make a sauce. Or even broil plain and add tarter sauce.
