Can I put dough in the fridge after first rise?

I make it ans then put it straight in fridge and take it out in the morning.

Hmm I always want to know that too.

But I dont do a second rise, if I have time Il do 20-30 mins and always fine.

I know my mil doesnt and hers are always fab.

The best is to put it into the fridge BEFORE first rise. It should rise, albeit slowly, in the fridge.
Then take out, come back to room temp, braid and rise.

Otherwise, it rises 3 times which causes over-rise and often will not have a good texture. (Since it rose, then rises slowly again in the fridge, and then will rise a 3rd time after braiding).

is the second rise a must?

this dough is for quite big cinammon buns,
the dough rises till double and then shaped and rises for another hr,

if I use this dough for rugelach which are much smaller des it need the second rise?
