I just finished preparing dough for challah rolls which I wanted to make sweet enough to be mezonos for sephardim. It called for 6 T. of sugar which I used and another 2 T. of honey which I forgot to add. It has now been rising for 20 min. Can I incorporate the honey now and kneed some more or should I just skip it? The rolls will be fine without but I dont know if they'll be sweet enough for mezonos and I really dont want them to be in some in btwn state where I'm not sure if they are mezonos or hamotzei and having to make hsmotzei on something else in order to eat...

Trying to incorporate the honey at this stage would be way too messy. You can try kneading in more sugar, a very little at a time. Or you could drizzle syrup over the rolls just before baking.
