Help me complete this menue

We are having dairy food both nights.
I asked my kids what they want.
They mentioned:
Tiramisu cheesecake
Strawberry cheesecake

A salad with croutons or cheese etc.
A cheese plate

What sides should I serve?
What else would you add to it?

I must say my younger kids probably won’t taste many cheeses. So they probably need a different main.

blintzes is a classes shavuous dish

Macaroni and cheese is always a winner here
I'm also doing eggplant parm
A buffalo mozzarella, cherry tomato, purple onion, endive salad
Salmon
quiche

Thank you for the ideas!
Pasta with cheese is our weekday dinner.

Do you think eggplant parm and lasagna will taste good reheated on the second night?

Blintzes are a great idea too.

Pasta and cheese reheated is great! Some times better than fresh according to my kids!

You need more of a main. Add in a fish and lasagna etc. and maybe also a cooked vegetable like quiche or string beans.

Baked fish, pasta with alfredo or vodka sauce or pesto, roasted vegetables.
