Dairy intolerant guest at milky meal

Hi,
I am having a guest for my milky meal on shevuos that is off milky and does not eat any veg( she knows that its a milky meal but has no where else to go)
The only thing I have on my menu that she will eat is fish
Looking for ideas what I can make, maybe things that can be made with and without cheese...

The parve side dishes you would make for a regular yom tov, like kugel, potato borekas, angel hair pasta salad. Kosher.com has lots of recipes, just filter your preferences

You can do a pesto pasta and take some out and then add cheese on top. Mashed potatoes some with cream and butter and some with oil and soy milk. Soups can be made parev.

Salads like Ceasar with parm cheese and without
Fruit smoothie with yogurt and without
Parve muffins, kokosh, cinnamon buns
Small red potatoes with oil and spices or with butter.
Creamed spinach with or without melted cheese
Calzones with or without cheese
Sushi salad
Fruit soup

What are you already planning to make? Seems like the easiest thing would be to set a portion aside before the dairy goes in wherever possible. Like if you're making pasta, set some plain aside, like you'd do for a fussy kid. You could also just have something simple like a baked potato or baked sweet potato. Maybe rice? Not really so many options for someone who doesn't want to eat any veggies.

I have 2 kids that are Lactose intolerant. They can eat a bit of dairy if it's cooked

I make parve onion soup (no butter, cheese on the side)
Greek salad, cheese on the side
Salmon
Veggie quich.
Pasta (my kids are ok with it. I use a bit of cream chease mixed into the sauce)

Think fruit instead vegetables?

Make a fruit cobbler or something of the sort, it is pareve and can be used as a main dish or dessert.

You could also make a pareve apple noodle kugel.

Serve a first course of melon or grapefruit.
