So,
I find turkey can get very, very dry... I have been perfecting my recipe for a while now, and I'm happy to share it with you all
Ingredients:
Turkey leg roll/dark meat roll - approx 1-1.5kg
1 whole white onion
seasoning blend - salt, garlic powder, black pepper, white pepper (important to use a little of both!), paprika (smoked if you have), parsley, rosemary, brown sugar (only around 1 tablespoon), a little bit of sundried tomato or tomato paste
white wine or sherry
olive oil
season your turkey and massage in the seasonings with some oil. leave it covered in the fridge to soak up the flavour.
Cook your onions in the oil until translucent in a pot that can be covered and put in the oven. If you will use tomato paste, add just a tablespoon and cook it down with the onions, adding some oil if needed. If you have whole sprigs of rosemary, add it now, and let it cook just a little. deglaze the pan with the sherry/white wine. turn off the heat. Add the turkey, coat in the ingredients you've prepared in the pot, and then cover. Roast in the oven COVERED for an hour at around 180c. Remove cover, roast for a further 15-20 minutes for colour.
When you remove the turkey from the oven, let it cool completely (overnight may be best) and then slice thinly. you can blend the onion-y liquid and add a little cornstarch to make a delicious gravy.
heat on your plata and it's a delicious shabbos turkey roll, really good with potatoes and roasted veggies.
